Hearty, healthy banana bread with a hint of spice and chocolate and a nutty crunch.

Ingredients
1 3/4cupwhole wheat or white whole wheat flour*
1tspbaking soda
1/2tspcinnamon or cardamom
1/2tspsalt
1/2cup (1 stick)butter, melted
1/2cupmaple syrup or honey
2large eggs, room temperature
1tspvanilla extract
3very ripe bananas, mashed
1/4cupGreek yogurt, fat or non-fat, thinned with a bit of water
1/2cupsemi-sweet chocolate chips or walnuts (optional)
Instructions
Preheat oven to 350°F.
In a large bowl, sift together flour, baking soda, cinnamon or cardamom, and salt. Set aside.
In another large bowl, mix together melted butter and honey. Add eggs one at a time and mix well. Add vanilla extract, banana mash, and Greek yogurt, mixing well after each addition.
Gradually add flour to the wet ingredients and mix until just combined. Don’t overmix.
Fold in chocolate chips or nuts, if using.
Pour batter evenly into a well-greased 9-inch loaf pan and bake for 50 to 60 minutes or until a toothpick inserted into the center of the loaf comes out clean.
Let cool in pan on a wire rack before turning out.
Notes
*You can substitute AP or bread flour but be especially careful not to overmix with bread flour or too much gluten develops.
